Recipe Source: I invented this one! We were down on the Eyre Peninsula between Whyalla and Port Lincoln in South Australia when we saw really cheap unopened oysters for sale. We grabbed a dozen for about $5 and then bought some bacon before heading out of town to camp in the bush. It wasn't until we got the goodies out to make our oysters kilpatrick for dinner that we realised we need a griller to make oysters kilpatrick, and all we had was a frying pan. We had a bottom heat source, and needed a top heat source. Turning the gas stove upside down was clearly not an option!

So I got clever and invented camping kilpatricks!


Ingredients
Unopened oysters
Bacon - the bacon needs to have a little fat on it
Worchestershire sauce
Fresh lemon halves to squeeze for juice


Method
Stack up the bacon into a pile and then finely slice it into shreds. Fry the bacon shreds in a pan over a medium heat. When the bacon is well frizzled, drain off any excess fat from the pan (don't bother if there's only a little fat, but if there's heaps I usually get rid of the lion's share). Add a good splash of worchestershire sauce to the pan with the bacon and stir. When the liquid has pretty much evaporated, generously squeeze in some lemon juice and stir. When the liquid has pretty much evaporated again, take the pan off the heat and keep the bacon mixture warm.

Heat up a dry clean pan with a tight fitting lid. Place the unopened oysters in the pan and put the lid on. Within a couple of minutes the oysters will steam themselves open - just keep tilting the lid every now and then to check whether they've started to open. When each one opens, remove it from the pan, take the 'shell lid' off, spoon some of the hot bacon mix over it. Then simply eat it! You may want to splash a little extra worchestershire and a squeeze of lemon on each one if you were a bit stingy with them in the bacon mix.
