Garlic Prawns


Unbeatable, but you'll stink for a week!

Recipe Source: This recipe comes from a book called The Food of Italy by Sophie Brainbridge and Jo Glynn. I first had a look at this book while Bradley and I were staying in Mildura with the Rudd Family. Leslie had a copy and it was only a matter of days before I'd bought myself one!

I first cooked this when we were camping at Wilpena Pound in the Flinder's Ranges National Park, South Australia. They were smashing! You should serve them with loads of fresh crusty bread to dip into the garlic sauce.

Serves 4

Ingredients
20 large prawns
60ml olive oil
80g butter
½ a red chilli, finely chopped
10 garlic cloves, crushed
60ml white wine
3 tablespoons chopped parsley


Method
Peel and devein the prawns, leaving the tails intact if you like. Put the olive oil in a large frying pan and add the butter, chilli and ½ the garlic. Cook, stirring, for 3 minutes. Add the prawns and sprinkle with the remaining garlic.

Cook for 3 minutes or until the prawns are pink. Turn the prawns, add the wine and cook for another 4 minutes. Add the parsley, season well with salt and pepper and serve with crusty bread.
