Roasted Curry Powder


A Sri Lankan style curry powder

Recipe Source: This recipe comes from a Sri Lankan cookbook called Sri Lankan Flavours: A journey through the island's food and culture, by Channa Dassanayaka (Hardy Grant Books, 2003). It's one of the best curry recipe books that I own.

Ingredients
6cm stalk of lemongrass
1 stick cinnamon
½ cup coriander seeds
10 curry leaves
10cm rampe, cut into 4 pieces
2 cardamom pods
3 cloves
¼ cup cumin seeds
¼ cup fennel seeds

Method
Place lemongrass and cinnamon stick in pan on medium heat and toss gently, roasting until golden brown - about 3 minutes. Then add coriander seeds, curry leaves, rampe, cardamom and cloves and brown for further minute. Remove from heat and add cumin and fennel and toss through the other ingredients. These will cook with the heat of the pan. Place in a spice grinder and blend until reduced to a powder.
