Peanut Caramel Squares

You need an 18cm x 28cm lamington or slice tin
Ingredients
For the Base:
125g (4oz) butter
½ cup sugar
1 egg yolk
1 cup plain flour
¼ cup self raising flour
2 tablespoons custard powder
¼ teaspoon salt
For the Topping:
½ cup brown sugar, lightly packed
1 tablespoons golden syrup
90g (3oz) butter
125g (4oz) roasted unsalted peanuts
Method
Preheat the oven to 180°C and butter an 18cm x 28cm lamington or slice tin.
Cream butter and sugar until light and fluffy, add egg yolk and mix well. Add sifted flours, custard powder and salt, mix to a firm dough. Press mixture into base of greased tin. Bake in preheated oven for 15 minutes or until golden brown.
Remove from oven, spread with prepared topping mixture, return to moderate oven for a further 5 minutes. Allow to cool in tin, cut into squares.
Topping: Place brown sugar, golden syrup and butter in small saucepan, stir over low heat until butter is melted and sugar is disolved. Simmer gently 5 minutes. Stir in roughly chopped nuts.
