Lemon Butter
(some call it Lemon Curd)


This is Aunt Rita Crute's recipe and it's a favorite within my extended family

Recipe Source: I got this recipe from Rita Crute in Rushworth a couple of years before she died. She's been making this stuff for as long as I remember and my family have always been lucky enough to get bottles of it to take home. You can eat this stuff heaps of different ways. You can have it on toast, with ice cream or just by the spoon-full!

Ingredients
¾ cup lemon juice
½ small cup water
2 cups sugar
2 eggs
½ very large tablespoon cornflour


Method
Make a cornflour thickening by mixing the cornflour with a little of the water then thoroughly beating in the eggs. Heat liquids and sugar together in a saucepan and stir until the sugar has dissolved. When just boiling, remove from heat and add cornflour thickening whilst stirring rapidly. Return mixture to the heat and stir constantly until it thickens enough to coat the spoon. Do not let it boil.
