Banana and Pineapple Cake

Makes 1 cake
You need: 15cm x 25cm loaf tin.
Ingredients
2 very ripe bananas, mashed with a fork
½ cup drained crushed pineapple
2 teaspoons ground cinnamon
1¼ cup caster sugar
1 and 2/3 cups self raising flour
2/3 cup oil
¼ cup pineapple juice
2 eggs
Method
Grease the loaf tin (see above) and then dust with flour. Line the base of the tin with baking paper or brown paper which has been cut to size. Preheat the oven to 180°C.
Mix together mashed bananas, crushed pineapple, cinnamon and sugar. In a separate bowl, combine oil, juice and eggs and mix will. Fold in flour and oil mixture alternately into banana mixture. Pour into prepared cake tin and bake for 45 minutes in preheated oven. Allow to cool for 10 minutes before turning onto a wire rack.
If you want to put an icing on this cake, beat together 250g cream cheese and 1½ cups icing sugar until light and fluffy. Add lemon juice to taste, and then spread onto cold cake.
